Apple Goodness

You saw our apple adventure on a previous post. Here are the yummy recipes we used with the apples we picked. They were all pretty basic and could be made with most things I already had at the house. Jaylyn really enjoyed helping making these goodies (and eating them!).

You already saw our apple pie that was more of an apple bake because we didn't have the right dish. We used "Nina's" recipe for her apple pie. I asked her for it a few years back. It has the delicious crumb topping. And, it is VERY easy.Filling:
8 apples sliced
1 1/2 cup sugar
2 T flour
1 t cinnamon
dash salt
2 T butter
Mix together and let set while making topping. (If apples are juicy, add more flour.)

Topping:
1 t cinnamon
1/2 c sugar
3/4 c flour
1/3 c butter
Mix sugar and flour together. Cut in butter until crumbly. Spread over top.
Cover edges and bake at 400 degrees for 40-45 minutes.

I always love a good fruit dip. . .
Caramel Apple Dip (from Light and Tasty) This is not necessarily an appealing picture. This is after being mostly eaten and coming out of the refrigerator.1 package (8 oz) reduced fat cream cheese, cubed
1/2 C caramel ice cream topping
1/2 C marshmallow creme
Apple slices

In a microwave safe mixing bowl, combine cream cheese and ice cream topping until blended. Add marshmallow creme; mix until blended. Microwave uncovered on 50% power for 1 minute; stir. Microwave 30 - 60 seconds longer; stirring every 15 seconds or until warm. Transfer to serving dish. Serve immediately with apple slices.

Another one I have done a few times. . .
Honey Nut Apples from Taste of Home (we always have it without the nuts. )2 T butter or margarine
2 T brown sugar
1/8 teaspoon ground cinnamon
3 large tart apples, thickly sliced
1/4 cup chopped walnuts
1 T honey
Melt butter in a large skillet over medium heat. Stir in brown sugar and cinnamon. Add apples and walnuts. Cook, stirring occasionally, for 8-10 minutes or until tender. Remove from the heat and drizzle with honey. Serve warm. 4 servings.

Then, for a new recipe. . .
Apple Cinnamon Turnovers (from Taste of Country)
1 medium tart apple, peeled and chopped
1/2 cup applesauce
3/4 t ground cinnamon, DIVIDED
Dash ground nutmeg (I accidentally did more - it is not so good!)
1 tube (7 1/2 oz) refrigerated biscuits
1 T butter or margarine melted
2 T sugar
In a bowl, combine the apple, applesauce, 1/4 t cinnamon and nutmeg. Separate biscuits; roll out each into a 6-inch circle. Place on greased baking sheets. Place a heaping tablespoonful of apple mixture in the center of each. Fold in half and pinch edges to seal. Brush with butter. Combine sugar and remaining cinnamon; sprinkle over tops. Bake at 400 for 8-10 minutes or until edges are golden brown. Serve warm.
Jaylyn sprinkling the cinnamon and sugar.

Ready for the oven.

YUM!

It is extra good with a scoop of ice cream!
